Whole30: Favorites from Week 2 & 3

 Deconstructed burgers with guacamole, red bell peppers, Romaine Lettuce, tomatoes, Caramelized onions, homemade ketchup, mustard and a compliant pickle! Making the patties with half sirloin, half ground beef is the way to have juicy and delish patties! Oh and frying them with yellow mustard on both sides makes it taste like in & out! 
Deconstructed Blackened Chicken Fajitas: 
Best Guacamole, Blackened Chicken on the Cast Iron, Cilantro Lime Cauliflower Rice
 a delicious Red Pepper used as delicious dippers
Best Breakfast! 
{I have a version of this every day-subbing different veggies!}
6 minute boiled eggs, Sweet Potato and Onion Hash, & half an Avocado 
{Maldon Salt sprinkled over the top!}
Balsamic Glazed Almond Chicken:
In a cast iron skillet, coat with EVO and turn heat on high. Place Balsamic Coated Chicken (about 1 1/2 cups) in the skillet and blacken on both sides for 2 minutes. Set into a deep pan for the oven. Then carmelize the 1/2 cup of diced onions, and 2 T of diced garlic. Throw in 1/2 cup of almonds after about five minutes and brown the almonds for a minute or two. Scoop the garlic, onion and almond mixture all over the top of the chicken and drizzle with 1/2 cup more of balsamic vinegar. Pop the pan into the oven for 12 minutes on 325 degrees. Your chicken will be done and wow you with the bold flavors!


We are on day 22, and I have already learned so much! What we input into our bodies makes such a difference, and I am thankful I am learning this now. I am also stoked that I am learning to love cooking. You can follow our adventure HERE. :)

Starting our Whole30 Experience

Recently we have made a big change in our lifestyle. We have committed ourselves to doing the Whole30 program, which essentially is a reset on your diet as a whole. There is no cheating on this program, for its about creating a new mindset on food and our food consumption. There is no grains, sugar, dairy, and legumes in our diet for 30 days. This has changed our way of life is so many ways already, but first and foremost it has taught me to plan ahead and always have good food in our house. As a mom of a very active boy, I find it hard to have time to make yummy meals, but this has taught me that you can make time for anything {if its important enough.} I used to grab for a big bowl of cereal, and now I prepare something with good fats, proteins and no grains-which is huge for me. I find that food is tasting more flavorful and delicious, and though I miss my bread, I feel really great. If you are interested in doing this, start with reading the book "It starts with Food." Also feel free to ask me any questions, I am always looking online and learning knew things about this method and would love to share what I have come to know. I would also suggest to ween yourself off sugars the week before you officially start because it can be a shock to the system. You don't realize how much they sneak sugars into everything, even marinara sauce!! Above are some of the meals we eat prior to whole30 with mostly compliant food, but I used soy sauce and cheese in both dishes. Below are some of the yummy things we have been cooking up! 


 Balsamic glazed zucchini omelet, half an avocado, & a red pepper  

Broiled lemon asparagus, Blackened Salmon, red peppers, and half an avocado with Maldon sea salt

Blackened Chicken, Lemon Broiled Asparagus, and cauliflower rice {but no soy sauce added}

A tasty snack! Almond butter, apple slices & coconut flakes

I hope this gives you a simple idea of what we are cooking up over here. I am going to be attempting some more creative ideas this week, so I will be posting those fun recipes!

Teddy has been ours for half a year!










Happy 6 months Sweet boy!

Ted ate his first "real food" and it was hilarious. He hated it. His face looked so disgusted and we couldn't stop laughing at his reaction. He was not impressed with baby food, don't take it personally gerber. 

Teddy loves music and dancing, which is adorable. He starts laughing the second I sing anything from drowsy, probably because I sang it all the time while I was pregnant- and he remembers me belting it on many random occasions.

T takes his whole hand out stretched and pulls it into a little fist to scratch things. Its so incredibly cute to watch his scratch everything, his favorites? My nose & wipes. He loves the noise, and will play with it for a long time. Why buy toys? Just give the boy some wipes.

Teddy loves moving everywhere and eating everything. Shoes, feet, bed frames, you name it. He will try and eat it.

He loves books. He will sit and look at books, and knows how to turn the page of those big cardboard ones. He tries to scratch them, and will sit and stare mesmerized at the colors.

This boy is starting to recognize sounds. He knows when we shake the bottle, that means food. He also knows that when the door opens-daddy is home! He will immediately start grinning, and wait to be picked up by A. Its so fun to watch him develop this skill of listening and learning.

For a couple weeks now he has been doing an awesome version of crawling, it looks like the worm. He will be up on his knees and hands, and pull his body forward while dropping. I am guessing breakdancing is in his future. #dancemoms

Ted is very social, and when he is sitting in church, he wants to look around everywhere. He makes eye contact with everyone around him and smiles. Its really fun to see him interacting with other people, and I get excited seeing him so friendly. A boy after his momma's heart.

His favorite times of the day are still eating and baths. He kicks like crazy in the water, and every chance he gets- he tries to drink the water. The whole time we are trying to keep his head up so he won't drink it. funny boy!

We took him to the beach and he LOVED it. Surprising because last time he cried the entire time. He put his hands in the sand and tried to dig his way to china. He also ate a good amount of dirt!
